Kitchen Confidential

1969 loves to cook. More than cooking, I love to entertain. I like having folks over, planning a menu, a theme. Setting a party mood. So with my better half's birthday approaching next weekend. I have set out to have a small party.

Now some people just like to invite folks over, order some pizza and drink some beer. That's a good night. However, 1969 has to have a "soiree". No, no...mere pizza and beer will not do.

Mr. 1969 (who technically is Mr. 1967...shhh!), would probably like a casual type environment. He doesn't like a whole lot of fuss. So during his Penn State game watching....I will invite some of his friends to stop by and share in the Mexican Fiesta.

We are having:

Beverages:

Corona
Dos Equis
Signature Red Grapefruit Margaritas

Appetizers:

Mango Salsa with Fresh Tortillas
Shrimp Ceviche
Roasted Chicken with Black Bean and Corn Quesadillas

Entree:

Grilled Steak and Chicken Fajita Station
Baja Fish Tacos Station

Desert:

Chocolate Birthday Cake served with Dulce de Leche Ice Cream

Did I mention, one of my aspirations is to write a cookbook? Yes, I am an amateur, self taught chef. LOL

So can you guys give me feedback on the menu? He's gonna need a good meal when Penn State gets beat by Ohio State...poor baby.

I cook great Trini food...curry chicken, oxtails, roti, pelau, stewed chicken...you name it.

I grew up in a family of great cooks. My grandmother owned a restaurant in Trinidad so we have all cooked most of our lives.

We ALWAYS seem to have folks showing up at our crib.

My hubby has a co-worker who just moved here from Cali. He is single, no friends in Philly.

He shows up almost every Saturday with a whole bunch of food and asks me to cook it. Last weekend it was Crabs. He walked in with a bushel of live crabs and said "Can you make steamed crabs?"

We ended up having an impromptu crab feast. I can't make this stuff up.

See, you've got me hungry now for some Caribbean food. Lord knows I love some curry chicken, jerk chicken, stewed chicken, roti and coco bread. Not a big fan of oxtail though. Give me a bottle of Cola Champagne along with my meal and some rum cake for dessert and I'm good. Most of the friends I grew up with are from the islands.

As far as crabs go, I'll pass. Can't eat em cuz I'm allergic to shellfish. One bite and someone better call 911 or get me some Benadryl real fast... lol.

GMo..There are some good Caribbean spots in DC. Go on and get yourself a nice plate!!!!

ON..let me know when you come through. (Oh yeah, I am working on my next trip to NY...I KEEP MY PROMISES MISTER!)

Epsilonicus...I have to come check out your blog. My friends are always telling me that I should start catering. I have done events for several close friends but I don't know if I am ready to give up the corporate paycheck just yet.
However, yes, I will help you plan your next party!

Oh not there so I guess you're still sitting there typing it and haven't hit send yet. I'll wait a little longer. In the meantime...the menu looks fabulous. I love fish tacos!!! Red Grapfruit maragritas...can't wait to try those..yummy!

@ 1969 - I've been to all of those restaurants in DC from Negril to Caribbean Delight to those in the Adams Morgan area and they're decent, but none of them come close to home cookin'. That’s like asking me to eat Thanksgiving dinner at Cracker Barrel. ... lol.

RD...you know mi casa es su casa. No Mr. 1967 is NOT Mexican (not that there's anything wrong with being Mexican). He likes spicy food and Mexican is easy to eat for all of the guys.

Gmo...you need a spot that is more in the cut. One near Howard. A real carribean spot, not one of those restaurants. A dirty, down home...cooking jerk chicken on the grill outside type of joint.

TJ...you need a snack break?

Dynasty...the tequilla is in the margaritas :) (With a couple of floaters on top)

You are officially my SHE-RO!!! I wisssssssssh I "loved to cook". My ass will eat ANYTIME,but cook..... I'm the one that struggles every night with the "what in the HELL am I gonna feed my child....." question! LOL

I would be the one setting out pizza and beer for them nee-grows........ LOL

Damn, for someone who lives alone all that food sounds delicious. I know your right about one thing Ohio State is gonna whoop dat ass, LOL...He'll have a full belly though and thats the important thing:)

Shoo, I may have to rent you for some dishes in a few weeks when Im in Wilmington, DE on union negotiations, LOL...
